Tortiglioni with Mince and Tomato Sauce


Hi again! Today we are going to cook a pasta dish with a delicious homemade sauce. I have chosen tortiglioni, although you can use macaroni or pasta spirals for this recipe too. Tortiglioni are good for chunky sauces and they are ideal for children. The cooking time is about 10 minutes if you like pasta al dente (firm to the bite). In less than half an hour you can prepare a deliciou dinner for your family or your friends.

Ingredients:

(Serves 4)

500 g tortiglioni
300 g beef mince
500 g passata (mashed) tomato
100 ml extra virgin olive oil
1 red pepper
1 onion
2 cloves of garlic
100 g grated cheese 
Salt
Ground black pepper

Difficulty and cooking time:

Easy
20 minutes

Method:

Finely chop the pepper, onion and garlic.


Put the extra virgin olive oil on a frying pan, add the chopped vegetables and a little salt. Stir fry until the onion is golden brown.


Then add the beef mince.


Add some ground black pepper, salt to taste and cook over a medium heat until the mince is done.


Then add the mashed tomato.


Cook for 5 minutes over a low heat, stirring occasionally.


Put the tortiglioni in a pot with boiling salted water. Boil them only for 10 minutes stirring occasionally, so the pasta is "al dente" and it keeps all its properties and flavour.


Drain the pasta and refresh it with cold water.


Put the pasta into the frying pan with the tomato sauce.


Cook for a couple of minutes, mixing thoroughly all the ingredients.


Serve and add the grated cheese. I've chosen extra mature Scottish cheddar on this occasion, which is one of my favourites.


Decorate with fresh basil leaves. This provides our recipe with a fresh scent and an amazing flavour.


And our dish is ready! Serve it hot.
