Roast Lamb

Hello again! I have cooked an especial dish for you. This is the recipe my mum used to prepare for New Year's Eve dinner in Spain and I decided to cook it to celebrate my first Hogmanay in Scotland.
British lamb is really delicious and this dish is quite easy to cook. Lamb meat is rich in fat, so we are not going to add any olive oil when cooking it. The cooking time for lamb meat is an hour per kilo. This lamb leg weights 2 K, so it takes a couple of hours to cook it in the oven. You just need a little time to prepare it, however I'm sure you will enjoy it as much as I do!

Ingredients:

Serves 6

1 lamb leg
2 k. small potatoes
500 ml. Spanish white wine
salt
ground black pepper
rosemary
thyme
oregano
2 bay leaves
extra virgin olive oil

Difficulty and cooking time:

Easy
2 hours

Preparation:

Place the lamb leg on a roaster and pour the Spanish white wine on it.


Then add some salt, ground black pepper, rosemary, thyme, oregano and 2 bay leaves.


Preheat the oven to 200ºc, place the lamb in the centre of the oven using the grill too. After an hour turn over the lamb leg and continue cooking  it for another hour.


When the lamb leg is almost ready (roughly an hour and a half) peel and wash the small potatoes.


Put the extra virgin olive oil in a frying pan. Salt and fry the potatoes for 10 minutes.


Then place the potatoes on the roaster together with the roast lamb leg.


Cook the lamb and the potatoes in the oven for 15 minutes and our dish is ready.


 Carve the lamb and serve it hot.
