Hi everyone! Today I'm going to show you how to cook this seafood dish. King scallops are mainly prepared in the north west of Spain.
This seafood is known as "vieira" in my country. It is very common in Galicia and its seashell has become a symbol of the city Santiago de Compostela, and a symbol for the pilgrims participating in the Way of St. James too.
There are several ways of preparing this dish. I have chosen this recipe because it is tasty and easy to cook... and because it is my favourite one as well.
When I moved to the UK I didn't expect to find king scallops here, and it was great when I discovered that the Scottish variety of this mollusc is incredibly delicious.
Ingredients:
5 king scallops in half shell
2 cloves of garlic
1 onion
Half a red pepper
500 ml. "passata" (mashed) tomatoes.
100 ml. extra virgin olive oil.
150 g. natural breadcrumbs
Salt
Ground cayenne pepper
Difficulty and cooking time:
Easy
1 hour
Preparation:
Chop the garlic, the onion and the pepper and put them into a frying pan with the extra virgin olive oil.
Add a little salt and stir-fry until they are done.
Then add the mashed / passata tomato.
Add some salt and simmer for 10 minutes, until the water has evaporated, stirring occasionally.
Then add the ground cayenne pepper and stir well.
Wash the king scallops, drain them well and add some salt.
Place the salted king scallops on a baking tray and cover them with the tomato sauce.
Cover each king scallop with 2 teaspoonfuls of breadcrumbs.
Preheat the oven to 200ºc and cook in the centre of the oven for 20 minutes using the grill too.
And now our dish is ready. Serve it hot.
