Today I've prepared this recipe for you. This is the way people used to cook bull meat from bullfights in the south of Spain, where I was born. Nowadays, as bullfighting has become less popular we use beef meat for preparing it.
This is another of my son's favourite dishes. As you can see below, one of the ingredients we use is white wine. Alcohol from wine burns off during cooking after a few minutes, while the grape flavour and smell remain, so children can safely enjoy this tasty dish too!
Ingredients:
(Serves 4)
1200g. Beef Lean Diced Steak
1 tomato
1 red pepper
1 onion
3 cloves of garlic
500ml. "passata" (mashed) tomatoes.
1 glass of Spanish white wine
150ml. extra virgin olive oil
1 teaspoonful of thyme
1 teaspoonful of cayenne pepper
1 spoonful of sweet paprika
Salt
Difficulty and cooking time:
Medium
1 hour and a half.
Preparation:
Chop the garlic, onion and pepper and put them into a pot with the extra virgin olive oil.
Add a little salt and stir-fry until they are done.
Then add the beef lean diced steak.
Cook over a high heat and stir until all the water from the meat has evaporated and the meat is cooked.
Then add the tomato (previously peeled and diced) and cook for 5 minutes.
Pour in the white wine, reduce heat and simmer for 10 minutes.
Then add the passata/mashed tomatoes. You can find this type of tomato already prepared and canned or packed at the supermarket.
Finally add thyme, cayenne pepper, paprika and salt. Stir well and let it cook on a medium heat for 20 minutes.
And then it is ready to serve. Share it with homemade chips or white rice.
