Hi everyone! Here's today's recipe.
Mushrooms are part of our Mediterranean diet. Fast and easy to cook, mushrooms are the perfect starter for a good meal.
In Spain I used to choose "boletus", which is a genus of mushroom I like very much. Since I moved to the UK I have been experimenting with new ingredients. On this occasion I have chosen Scottish chestnut mushrooms, one of my favourites, and the result has been amazing.
Any type of mushroom can be prepared following this recipe!
Ingredients:
(Serves 2)
250g Scottish chestnut mushrooms
50ml extra virgin olive oil
50ml Spanish white wine
An onion
A teaspoonful of soy sauce
Salt
Difficulty and cooking time:
Easy
15 minutes
Preparation:
Wash and cut the mushrooms
Peel, wash and chop the onion
Put the extra virgin olive oil in a frying pan and add the onion and a little salt (salt helps evaporate the water from the onions) Stir-fry until the onion is done.
Add the mushrooms and salt, then simmer for 5 minutes stirring occasionally.
Then add the Spanish white wine and cook for 5 minutes, stirring occasionally until the alcohol has burned off.
Finally turn off the heat, add the soy sauce and stir well.
And now it is ready to eat... Serve it hot.
