Fried Small Sweet Peppers

Hello everyone! Today I'm going to cook something fast and delicious. In Spain we usually have peppers, either red or green, served along with meat, fish, or with our famous tortilla. Red peppers constitute a great source of vitamin C and A, and its content in beta carotene is very high, so it's full of antioxidant properties. They are  essential in any balanced diet. It takes very little time to prepare this recipe, and it is the perfect side dish for any occasion.

Ingredients:

(Serves 2)

400 g. red small sweet peppers
200 ml. extra virgin olive oil
Salt

Difficulty and cooking time:

Easy
15 minutes

Method:

Wash and dry the peppers.


Carefully remove stems using a knife.


Put the olive oil in a frying pan over a medium heat and fry the peppers, stirring occasionally until they are soft and brown. (About 8 minutes)


Strain well the peppers using a straining spoon, put them into a plate and salt to taste.


And it's ready! Serve it either hot or cold.
