Chicken Skewers

Hi everyone! Today I cooked these Spanish style chicken skewers for dinner. They are very easy to prepare, and a healthy and tasty dish as well. Mushrooms,tomatoes and chicken are the perfect combination of flavour. Your children will enjoy this dish. It is great for a party or for barbecues. To cook them at home, you will only need a frying pan or a griddle. Don´t forget to soak in water bamboo skewers in case you cook them on a barbecue.

Ingredients:

(Serves 4)

8 bamboo skewers
800 g chicken breast (diced)
300 g baby button mushrooms
300 g cherry tomatoes
1 teaspoon of  hot paprika
1 teaspoon of ground saffron (or a pinch of saffron)
1 teaspoon of ground garlic
2 tablespoons of extra virgin olive oil
Salt

Difficulty and cooking time:

Easy
30 minutes

Method:

Place the diced chicken in a large bowl and add the saffron, hot paprika and chopped garlic.


Then add 2 spoonfuls of olive oil, salt to taste and mix all the ingredients thoroughly.


Wash the mushrooms and tomatoes in cold water.


Thread the tomatoes, chicken and mushrooms onto the skewers and place them on a dish.


Add a couple of lugs of olive oil into a griddle over a medium heat. Cook turning regularly until golden brown.


Serve with homemade fries and salad.
