Prawn Cocktail

Hi again ! Today I cooked this prawn cocktail for you. I'm going to show how to prepare a delicious homemade pink sauce. In Spain this sauce is mainly served with prawns, shrimps or lobster. The base for this sauce is a homemade mayonnaise, made with Spanish olive oil. However you can prepare pink sauce using any mayonnaise sauce instead.  This is a recipe my dad used to cook for us on special days. It is a simple and delicious starter dish and it only takes a few minutes to prepare it.

Ingredients:

(Serves 4)

300 g. raw king prawns
1 small round lettuce
1 egg
200 ml extra virgin olive oil
1 tablespoon of lemon juice
4 teaspoons of tomato sauce
1/2 teaspoon of sweet paprika
Tabasco sauce
Salt

Difficulty and cooking time:

Easy
20 minutes

Method:

Peel the raw king prawns.


Put a litre of water in a small pot, add a tablespoon of salt and bring it to the boil. Add the raw peeled prawns to the boiling water and cook for 2 minutes.


Drain using a colander and let the prawns cool down.


In the meantime wash and shred the lettuce.


Place the shredded lettuce in serving dishes or large wine glasses and put the prawns on top.


To make the mayonnaise place the egg, the lemon juice and a teaspoonful of salt in a jug, beat using a blender and slowly add the olive oil in a thin and uniform stream, so that the oil combines with the other ingredients, resulting in a thick sauce.


Put 4 tablespoons of  our homemade mayonnaise in a small bowl. Add 4 teaspoons of tomato sauce and mix with a fork until smooth.


Then add half a teaspoonful of Spanish sweet paprika and stir well.


Finally add 4 or 5 drops of Tabasco sauce and mix again using a fork.


Top our dish with the pink sauce.


And it is ready. Serve immediately or keep in the fridge covered with film.
