Meatballs in Saffron Sauce

Hi everyone! Here you have a new recipe to try yourselves. Saffron gives the dish that characteristic flavour and also an appetising and colourful appearance.
I have used pork mince for this recipe. The mild flavour of this meat perfectly combines with this tasty yellow sauce. This is a traditional recipe from southern Spain, it is very easy to cook and the result is really delicious. It's perfect for children. You can prepare these meatballs with saffron and save them for the following day because they will keep the same delicious taste and scent.

Ingredients:

(Serves 4)

800 g. pork mince
4 cloves of garlic
1/2 onion
1 egg
100 g. natural breadcrumbs
200 g. plain wheat flour
300 ml. Spanish white wine
200 ml. extra virgin olive oil
4 bread slices
1 pinch of saffron or a teaspoon of ground saffron
Ground black pepper
Salt

Difficulty and cooking time:

Easy
1 hour

Method:

Finely chop 1 clove of garlic and julienne the onion.


Whisk the egg in a large bowl.


Add the pork mince, the chopped garlic, 100 ml of white wine, salt to taste and the breadcrumbs.


Mix all the ingredients thoroughly using a fork.


Wet your hands, so the mince won´t stick to them and make the meatballs.


Coat the meatballs in flour.


Put the extra virgin olive oil in a frying pan and fry the battered meatballs until they are done.


Place the meatballs in a pot and save them for later.


Fry the bread slices and 3 cloves of garlic in the same olive oil we've just fried the meatballs.


Put the fried bread and garlic in a jar, add 200 ml. of white wine and beat well using a blender.


Pour the resulting sauce in the pot with the meatballs, add the saffron and stir carefully.


  Salt and pepper to taste and simmer for 5 minutes, stirring from time to time.


In the meantime stir fry the onion until golden brown. 


Add the fried onion and cook for a couple of minutes.


Our dish is ready! Serve it hot with homemade fries or rice and a salad.
