Cheese Creme Caramel

Here you have one of my favourite desserts. It is very easy to cook and really delicious! My son is on Christmas holidays, so he has helped me preparing this recipe. He really loves cooking! If you want to try this tasty dessert, you should cook it the day before because it has to be chilled in the fridge at least 3 hours before serving it.  I used to make this recipe using "Burgos" cheese, which is a very common type of fresh cheese used for desserts and salads in Spain. I have used Scottish cottage cheese instead, and the result has been amazing!

Ingredients:

200 g. sugar
300 g. cottage cheese
300 ml. milk
400 g condensed milk  (small can)
4 eggs

Easy
1 hour and a half

Method:

Place the sugar in a flan mould or a loaf tin.



 Simmer and stir from time to time. Be very careful, the burn from hot caramel can be really painful.


After 10 or 15 minutes the caramel is ready. Retire from fire and leave to cool in the tin.


Pour the fresh milk into a blender.


Add the cottage cheese.


Turn on the blender and mix well.


Whisk the eggs.


Add the condensed milk and mix the ingredients thoroughly using a whisk.


Then add the previously mixed cottage cheese and mix well.


Pour the resulting mixture on the loaf tin with the caramel.


Preheat the oven to 200ºC and double-boil the mixture for 45 minutes using the grill as well.


Take the mould out of the oven and leave to cool. It takes about an hour.


Chill in the fridge for 3 hours, then turn it over on a dish and decorate it with sugar shapes or your favourite fruit.


Ready to serve.
