Marmitako (Tuna Stew)

Hello again! I've been cooking this delicious and traditional dish for you all today. This is  one of my favorite fish stews. Fish is one of the main ingredients of our Mediterranean diet. This is a healthy and tasty recipe that  has been cooked in my family from generation to generation. This dish is great for anytime of the year. Tuna is a fatty fish highly consumed in Spain,  it's a natural source of omega-3 fatty acids and it's also low in calories. I hope you like my granny's recipe as much as I do.

Ingredients:

(Serves 4)

500 g. tuna steaks (skinless and boneless)
1/2 green pepper
1 onion
2 cloves of garlic
800 g. small potatoes
4 tablespoons of passata (mashed) tomato
250 ml. white wine
1 fish stock cube
100 ml. extra virgin olive oil
Fresh parsley (chopped)
Salt to taste

Difficulty and cooking time:

Easy
40 minutes

Method:

Chop the garlic, onion and green pepper.


Put the extra virgin olive oil in a pot and stir fry until onion turns golden brown.


Peel, wash and halve the small potatoes.


Salt the potatoes to taste and put them in the pot.


Pour the white wine.


Add the mashed tomato.


Finally cover the potatoes with the fish stock (to make this stock dissolve the fish cube in half a litre of boiling water) Bring to the boil, reduce heat and simmer for about 15 minutes.


In the meantime dice the tuna steaks.


When the potatoes are done add the diced tuna, add a little salt and cover with lid.


Cook for just 2 minutes and our dish is ready.


Serve in a soup plate with fresh chopped parsley.
