Oven Baked Cod Loin

Hi everyone! Today I'm going to show you how to cook a delicious fish dish. Cod is an important source of vitamins and omega-3 fatty acids. Cod is mainly cooked in the north of Spain. We often use dried and salted cod for our recipes. Cod is an important part of our Mediterranean cuisine.
Its mild flavour is perfect for children. This healthy dish is ideal for a dinner. It only takes 30 minutes to prepare it and it is very tasty.

Ingredients:

(Serves 4)

4 cod loin fillets
1 red pepper
200 ml extra virgin olive oil
200 g plain flour
200 ml Spanish white wine
chopped garlic
salt

Difficulty and cooking time:

Easy
30 minutes

Method:

Salt the fillets to taste and sprinkle with chopped garlic.


Coat the fillets with flour.


Put the olive oil in a frying pan over a high fire and cook the battered fillets for 2 minutes, then turn over and cook the other side for another 2 minutes.


Place the fillets on a baking tray, add the white wine and 2 tablespoons of the oil used for frying.


Decorate with thin red pepper strips.


Preheat the oven to 200ºC and bake for 10 minutes using the grill too.


And our dish is ready. Serve it hot with boiled potatoes.
