Chicken Paella

My recipe for today is a chicken paella. Paella is one of the most famous Spanish dishes. It can be cooked in a lot of different ways, you can add your favourite ingredients to rice - seafood, fish, chicken, beef or your favourite vegetables. Paella is a typical dish from Valencia, and the base of this recipe is rice. Today I have cooked this variety of  paella because most children prefer chicken rather than seafood, however I will show you soon how to cook other types as well. If you want to enjoy the amazing flavour of this dish don´t forget that paella has to be served just after cooking. As the Spanish saying goes "guests should wait for paella and never paella for guests".

Ingredients:

Serves 4

300g Chicken breast fillets
500g Spanish paella rice
100ml Extra virgin olive oil
1l water
50ml Spanish white wine
1onion
2 cloves of garlic
1 red pepper
1 tomato
1 chicken stock cube
Saffron
Ground black pepper
Salt

Difficulty and cooking time:

Easy
45 minutes

Preparation:

Chop the garlic, onion and pepper.


 Peel and dice the tomato.


 Dice the chicken breast fillets.


 Add the salt and ground black pepper.


Put the chopped garlic, onion and pepper in a frying pan with the olive oil and stir-fry for 5 minutes, then add the diced chicken.


Cook the chicken for 5 minutes and then add the diced tomato.


When the tomato is done add the Spanish white wine and cook for 5 minutes, stirring occasionally until the alcohol has burned off.


Add the rice. I have chosen a round grain variety of rice, although long grain rice or any other kind is also fine.


  Add salt to taste and stir well for a couple of minutes.


Turn on the kettle and add 1 litre of boiling water.


Add the chicken cube and stir well.


Then add the ground saffron or a saffron thread. This gives paella its characteristic yellow colour and flavour as well.


Stir and cook for 15 minutes over a medium heat until the rice is done.


Cover the paella with aluminum foil for 2 minutes, so the rice can absorb all the stock.


And then our dish is ready...
