Squid in Tomato Sauce

Hello everyone! Here you have one of my favourite recipes for squid. It's easy and fast to prepare and the result is amazing. Don`t forget that the secret to get a soft result and keep the natural flavour of squid is that it has to be cooked  for just a few seconds, in the case of fried rings, or for a long time over a low heat whenever we cook a stew. I hope you enjoy this colourful and tasty recipe as much as I do.

Ingredients:

(Serves 4)

1 kg of whole small fresh squids
1 onion
2 cloves of garlic
150 ml of white wine
250gr of  "passata" (mashed) tomatoes.
Salt
Extra virgin olive oil

Difficulty and cooking time:

Easy
30 minutes

Method:

Clean the squids, removing guts and rinsing well with cold water.(Keep the tentacles because they are very tasty). Your fishmonger can do this for you, however you can use frozen, cleaned squid as well.


Finely chop the onion and the garlic.


Heat the olive oil in a large pan over a medium heat. Add the chopped onion and garlic, a little salt, and stir fry until they are golden brown.


Then add the cleaned squids.


Salt to taste and cook over a medium heat for 5 minutes, stirring occasionally.


Add the white wine.


Then add the passata tomatoes and stir thoroughly.


Reduce heat and cook the squids for 20 minutes, stirring from time to time.


And they are ready. Serve them hot with homemade fries or rice.
