Serrano Ham Swirls

Hello! Today I have been cooking these homemade rolls and I have filled them with our traditional Jamón Serrano, a type of dry-cured Spanish ham.  However you can fill these rolls with cooked ham or bacon as well. I have also add aubergines because they provide great flavour and colour to this dish. Aubergines have many health benefits. They are low in fat, their skin has high antioxidant properties and they also help to reduce cholesterol levels. These rolls are very easy to prepare. They are ideal as a starter or for a dinner. You can serve them either cold or hot, they are delicious even the following day! So you can take them for lunch at work.

Ingredients:

Serves 4

250 g. puff pastry (fresh or defrosted)
150 g. of sliced Spanish Serrano ham
150 g. of your favourite cheese slices
1 aubergine
100 g. of plain flour
Salt
50 ml of extra virgin olive oil

Difficulty and cooking time:

Easy
40 minutes

Method:

Once the pastry is fully defrosted, lightly flour the work surface and the pastry.


Roll out the pastry as thin and even as possible.


Wash and cut aubergine into strips.


Add a couple of lugs of extra virgin olive oil to a frying pan, stir- fry the aubergine for 5 minutes and salt to taste.


In the meantime, put the Serrano ham slices on the rolled-out puff pastry.


Add the cheese slices.


Put the aubergine strips on top.


Make a roll.


When the roll is ready...


...cut it into thick slices.


Place the rolls on a baking tray and preheat the oven to 200ºC.


Place the rolls in the centre of the oven and bake them for 20 minutes using the grill too.


 Serve them either hot or cold.
