Hi again! Today I have been cooking one of my favourite fish dishes, roast sea bream.
Fish and seafood are the base of the Mediterranean diet. Fish is a great source of omega-3 fatty acids, which are essential to human health. Fatty fish like salmon, mackerel, swordfish or kipper are richer in omega-3 than others. Fish together with the properties of extra virgin olive oil help you to protect against cholesterol and blood pressure. I have used sea bream for this recipe, but you can prepare this dish using your favourite fish, or even mixing up different types.
Ingredients:
Serves 2
1 gutted and cleaned whole sea bream
4 potatoes
2 tomatoes
1 onion
200 ml Spanish white wine
50 ml extra virgin olive oil
Ground black pepper
Salt

40 minutes
Preparation:
Finely chop the onion.
Peel, wash and slice the potatoes
In the meantime, wash and chop the tomatoes.
Once the potatoes and the onion turn golden, place them on a roast tray.
Put the cleaned sea bream on the fried potatoes and onion base and pour the white wine.
Add the chopped tomatoes.
Salt the sea bream to taste and add some ground black pepper.
Add the extra virgin olive oil, preheat the oven to 180ºC and place the fish in the middle of the oven using the grill too.
Cook in the oven for 30 minutes and our dish is ready.
Make fillets, carefully removing any bone and serve it hot.
